Vinification
The vinification is done in traditional wine presses, “ lagares “ , with about 7 days of fermentation and maceration at a temperature of no more than 28/30ºC
The malolactic fermentation is made in stainless steel vats.
Aging
The wine aged 100% in new and used French oak barrels ( 60% in 500 liters barrels and 40% in 225 liters barrels ) , during 12 months.
